Hawthorne
The hawthorn (Crataegus) is a stone fruit belonging to the Rosaceae family. It is mainly found in North America, but some of the 300 species can be found in Europe. As a protective shrub, the hawthorn was often used as a field border and many animals thrive around and in it. It was known for its effects among ancient Germanic tribes and was revered for its nutritious berries.
Yarrow
A remarkably resilient perennial, yarrow grows throughout Europe and northern Asia, extending as far as the Arctic Circle. So hardy it often remains visible above ground even in winter, it is a plant with a long and storied tradition in herbalism. Yarrow's legacy is rooted in ancient Greek mythology, which holds that the hero Achilles used the herb to treat his soldiers. This legend is immortalised in yarrow's botanical name, Achillea millefolium.
Red Clover
Red clover (Trifolium pratense) has many names such as Hummellust or Zuckerbluemli. Red clover can be found in meadows and fields, in sparse forests in hilly and alpine altitudes. As a plant cultivated for fodder production, it can be found all over Europe. Since the Middle Ages, red clover has had a firm place in monastery gardens and hay gardens.
Lemon Balm
Melissa officinalis is a southern European plant. Like many herbs from the south, it was first cultivated in monastery gardens and then gradually spread throughout Europe. The perennial plant sprouts in March and can grow up to 70cm tall by July and is clearly recognisable by its scent. Due to its versatile use case, however, it was cultivated early on throughout Europe as a popular aromatic herb. In the Middle Ages, it was cultivated in every monastery garden because it was considered particularly valuable.
Hops
The hop (Humulus lupulus) is native to eastern Europe and western Asia. It requires nutrient-rich deep soils and wind-protected locations to thrive, and is typically found on the edges of woods and on fences and hedges, up to 1,000m above sea level. It belongs to the Cannabinoid family and its properties are deeply rooted in the inviolable brewing laws of beer. Hops have been used as a medicinal herb since Hildegard von Bingen's time.
Dandelion
The dandelion (Taraxacum officinale) is a resilient perennial herb native to the entire northern hemisphere. It exhibits remarkable adaptability, thriving in diverse habitats at altitudes of up to 2800m above sea level such as meadows, forests and even urban environments, where it can be found in such unlikely areas as cracks in the pavement. The dandelion can grow up to 10cm tall and is characterised by its distinctively white sap present in all parts of the plant. Although references to the dandelion date back to the 11th century in Persia, it wasn't until the 16th century that it was mentioned in European herbal lore.
Cowslip
Cowslip (Primula veris) was found in ancient times only north of the Alps and can be found at altitudes of up to 2200m. The Celts and Germans valued this beautiful harbinger of spring and it was already described in medieval plant books. According to legend, it can be used to "unlock heaven."
Marigold
The marigold (Calendula officinalis) belongs to the Asteraceae family and is widely found across Europe. It has strinkingly bright yellow and orange flowers and is commonly seen in gardens. The petals are the most frequently used part of the plant, traditionally dried for tea preparations or as an extract for external use.

Infuse 2 tsp (4g) with 250ml of boiling water (90–100°C) three times daily and allow to steep for 3–5 minutes. Enjoy before meals.
Shake thoroughly before each preparation to ensure the individual herbs are well mixed.
